I mean poisoning can be immediately detected, how do you even detect prions. Such a terrorist can murder a lot of people before ever getting caught, right?

    In addition to the other answers here, the incubation period for prion diseases is quite long. Based on a quick search they seem to take anywhere from five to 40 years to even start showing symptoms. A killer would probably want more immediate results.
