Gumbo. Usually I put chicken and sausage in it, but if I can get some good shrimp and crab, that’s the tops.
kibbeh. I don’t make it in a very traditional way I think. Its the way my Syrian mom taught me. Basically a meatloaf with equal parts lamb and beef. Bulgur wheat, onions, pine nuts and lots of seasonings (cinnamon is the wild card and most distinctive part).
Chnöpfli (similar to Spätzle). Central Swiss wheat pasta.
